Garlic Toast Bruschetta

This is a very simple recipe that makes for a great appetizer! It is really good with chicken, soup, and pasta. We found this great recipe in a booklet from Kroger with the coupons they send us all the time.

Ingredients:
1 box of Texas Garlic Toast
 4 Large Roma tomatoes
1/4 cup of fresh basil leaves, chopped
8 thin slices of fresh mozzarella
Salt & Pepper as needed

Preheat the oven to 425 degrees F. Arrange the frozen toast slices on a sheet pan {we used aluminum foil too} and bake for 5 minutes. Remove the toast from the oven and top with the remaining ingredients. Return to the oven and bake for 3-5 minutes or until the cheese begins to melt/brown.  And there you have it!  An easy, fast, appetizer to serve for dinner.  It adds a fun twist to garlic bread for sure :)
