Red bell pepper eggs!


Bell pepper eggs are delicious! My inspiration came from Skinnytaste.com.  Eggs are one of my favorite things to eat for breakfast, but sometimes just eating an egg can get plain and overdone.  This recipe is also fairly easy to re-create.  All you need is 1 bell pepper chopped into slices {highly unlikely you'll use the entire pepper unless you're cooking several eggs}, an egg, 1/4 cup olive oil, and salt&pepper.



First things first, heat up the olive oil on your skillet on medium, add the slice of bell pepper {cook for approx 1 minute} then slowly crack egg into the middle of the pepper. Sprinkle salt & pepper onto the egg as desired.

Once egg is slightly cooked, gently flip it over and allow the egg to finish cooking. Then add to your plate and enjoy. My favorite way to enjoy this breakfast is to pair it with grits and Tropicana's orange juice.
