Zucchini pizza bites!

This is an awesome bite-sized lunch or snack idea! On a day that you are craving pizza {we all know how unhealthy pizza can be}, why not try these delicious zucchini bites instead. I made them for the first time last week and they were a huge hit with both my boyfriend and our 15 month old son.

1 1/2 cups of pizza sauce {homemade or store bought}
1 cup of fresh shredded mozzarella cheese
Olive oil spray

First steps:

Set the oven to "broil". Cut the zucchini into bite sizes. Lightly spray both sides with olive oil, topping with a pinch of salt. Cook the zucchini alone for 1-2 minutes.

Next step: Remove the zucchini from the oven, slowly stir sauce onto the zucchini bites, afterwards adding shredded mozzarella cheese to top. Place back into oven, cook for additional 2-3 minutes or until cheese melts. Monitor closely, as the cheese turns to burn quickly.

Last step: cool down & enjoy! My boyfriend loves to snack on these with me, and our son enjoys eating them as well. He has no idea that they aren't real pizza, so I use it while I can get away with it.
