Two simple & healthy lunch ideas



Healthy eating can get routine after awhile but I actually find myself staying on track when I eat similar meals. Here are two of my favorite lunches (or even dinners) that I frequently eat. They're simple, relatively cheap to make and meatless. The first picture is spiralized squash sauted with grape tomatoes, bell pepper, and onions. It was then topped with pesto sauce and feta cheese. The texture of spaghetti but it's all veggie. Yum!!

 The second picture is cooked quinoa, topped with strawberry, avocado, steamed peas& carrots. Of course topped with my favorite feta cheese as well as balsamic vinaigrette. Full of flavor and healthy! Two things that go together well.
